A “pincho” is a tapa served on a slice of bread, these tapas are very common in the north of Spain in País Vasco where they have hundreds of these different tapas on bread.

Today we are showing you a simple yet very tasty pincho, the recipe’s ingredients are prawns and oyster mushrooms but you can try also different combinations like  calamari and other mushrooms.

Prawn and mushroom pincho

  • 8 oyster mushrooms, stalks removed
  • 4 tbsp olive oil
  • 8 prawns, peeled
  • 4 cloves garlic
  • fresh parsley
  • Maldon sea salt, to taste
  • Alioli mayonnaise
  • 4 cherry tomatoes
  • Baguette bread
  1. Fry the peeled prawns and garlic in olive oil.
  2. Grill the mushrooms and cherry tomatoes and add fresh parsley
  3. Place one prawn and mushroom and cherry tomato and fix tit tight on a toothpick.
  4. Serve on slices of white bread with alioli.
  5. Add some maldon salt.
